Butter Cakes are the simplest of cakes to make. They take about 15 minutes to prepare and around 35 minutes to bake and make for a great mid-morning or mid-afternoon snack, or something simple and unpretentious for dessert. They form the basis for more elaborate cakes.
Ingredients
- 150 g Plain Flour
- 120 g Sugar
- 150 g Softened Butter
- 1/4 tsp Salt
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 2 Eggs
- 5 ml Essence of Vanilla
Instructions:
Step 1: Begin by mixing 120g of sugar with 2 eggs in a mixing bowl. Whisk on high for 3 minutes or until the sugar and eggs are fully combined.
Step 2: Add 150g of softened butter and continue to whisk on high for another 3 minutes. Use the remaining butter on the wrapper to grease the cake tin.
Step 3: Add 5ml of Essence of Vanilla to the batter and whisk for another 2 minutes.
Step 4: Sift 150g of plain white flour, 1 teaspoon of baking powder, 1/2 a teaspoon of baking soda and 1/4 teaspoon of salt into the batter, and whisk for another 3 minutes, starting slow, and increasing to maximum.
Step 5: Add 2 tsp of milk to the batter, fold in and whisk for another minutes.
Step 6: Transfer the batter to the cake tin, and bake in a preheated oven at 180°C for 35 minutes. You can insert a skewer into the cake to test for doneness. If it comes out cleanly, it’s done.
Step 7: Allow to cool, before carefully removing from its container.
Step 8: Slice and serve. Best served with a hot beverage of choice and some fruit or fresh cream on the side.
